Yamaha Water SportsI have a 1985 Yamaha sports bike, its a 750cc and I wondered how many Quirt oil should I put in it?

I have no idea haw many Quirt supposed to do I fill it halfway into the crankcase or more or less, and he loves to be hot im sitting at the traffic stop but when im moving its ok it remains cool Should I get onther thermostat I think it has much coolant I think it's just running poorly or can it be the water pump going out?
